What Makes a Great Chocolate Chip Cookie

Chocolate chip cookies are simple enough that every variable shows. There are five that actually change the result.

1. The butter

Browning the butter cooks off water and toasts the milk solids, which is where the nutty, caramel depth comes from. It also means less moisture in the dough, so the cookie sets with a denser, chewier crumb. We use European butter for the higher fat content.

2. Aging the dough

Resting dough overnight lets the flour fully hydrate and the sugars start breaking down. The visible difference is color and edge: aged dough browns more evenly and tastes noticeably more caramelized. It's the single change that most improves a home batch.

3. Chocolate percentage and format

Chips are engineered to hold their shape, which is why they never melt into pools. Chopped bar chocolate — we use 70% Belgian — creates the layered pockets you get when you break a warm cookie in half. Higher cacao percentage also balances the sugar in the dough.

4. Salt

Salt in the dough seasons; flaky salt on top contrasts. The crystals stay distinct so you get a sharp saline hit against the chocolate rather than a uniformly salty cookie.

5. Underbaking, deliberately

Pulling the tray while the center still looks slightly underset is intentional. Residual heat finishes the middle on the pan, which is how you get a crisp edge and a molten center in the same cookie. Left in another two minutes, it's a uniformly firm cookie.

Bake what you'd want to eat warm, and send it out the door before it cools.

Judging a cookie you didn't bake

  • Break it in half. Distinct chocolate pools mean bar chocolate, not chips.
  • Look at the edge. Even golden browning suggests rested dough.
  • Taste for salt contrast. Flat sweetness usually means salt only in the dough.
  • Check the center at room temperature. It should still be soft, not cakey.
